Pineapple......

I was in the mood to bake some cupcakes and wanted to try something different. I decided on Pineapple cuppies with Pineapple butter cream. I guess I was dreaming of something tropical in the midst of all the cold weather we had. I sort of made up the recipe as I went. I added some crushed fresh pineapple, the juice in place of the liquid, coconut and coconut flavor instead of vanilla. The butter cream also had crushed pineapple, coconut flavor and little bit of yellow coloring. I topped them with some dried pineapple pieces. I have to say they were not my favorite. They were moist, perfectly cooked and looked pretty cute! It was a really good fresh pineapple flavor, not an artificial taste. But my favorite pineapple dessert is still upside down cake. I couldn't eat more than one of these cupcakes at time.....that was a very good thing!







I did some in pink with sprinkles for my girls....
