Extra Icing.....

Inevitably I always have extra butter cream icing leftover whenever I make a cake or cupcakes. Especially since my Husband does not like icing on his cupcakes. So what do you do with it? A year ago I discovered a quick and easy solution. Mini Nilla Wafer cookie sandwiches. They are bite size and easy to pop right into your mouth, too easy! They taste best refrigerated.

I normally make them when I have plain vanilla butter cream but I'm sure certain flavored butter creams would taste good also. Ironically, my husband will eat these even with the icing!
